Nonnie’s Gluten Free Tomato Basil Pasta

An oldie, but goodie… a dish I have loved since I was a little girl, and I’m certain you will too!

Ingredients Needed for your Gluten Free Tomato Basil Pasta Recipe:

  • Angel Hair or Penne Pasta (preferably gluten free)
  • Olive Oil
  • 2 cloves garlic, minced
  • 2 (14 oz) cans of organic petite- diced tomatoes
  • Salt & Pepper
  • Italian Seasoning
  • Baby Spinach
  • Basil
  • Parmesan Cheese, shaved

Bring a large pot of salted water to a boil and cook pasta according to package directions. Heat olive oil in a large sauté pan over medium-high heat. Sauté minced garlic for a quick minute, then add diced tomatoes with their juice. Season the sauce with salt, pepper, and Italian seasoning. Lower heat and simmer until sauce is reduced slightly. Drain pasta and add to the sauce in the sauté pan, toss to coat. Add a couple of handfuls of baby spinach to the hot pasta and stir until wilted. Build your bowl: garnish bowl of pasta with fresh basil and shaved parm. Add a glass of white wine and bon appétit.
