The Elevated Egg Bowl Recipe

The elevated egg bowl… A Seersucker take on a local dish from one of my favorite Indy restaurants. This cuban bowl recipe is quite possibly the best regular macro-friendly meal.

Ingredients Needed for this Cuban Bowl Recipe:

  • Brown Rice OR Quinoa
  • Black Beans
  • Chili Lime Seasoning
  • Eggs ( I prefer over easy/medium)
  • Avocado
  • Feta Cheese
  • Salsa Verde
  • Sriracha Ranch Dressing (if you have it!)

Cook grain according to package directions. In a small saucepan, heat black beans and season with chili lime seasoning. As those cook, heat olive oil in a small skillet over medium-high heat. Crack an egg into the pan and cook unitl the desired level of doneness- I like my yolk to dress my bowl, so over easy/medium is my preference! Build your Bowl. Layer grain as the base, add some black beans, add your fried egg. Top with avocado, feta, salsa verde, a drizzle of Sriracha ranch and a dollop of sour cream or greek yogurt.
